Are you familiar with egg bites? A really popular national coffee chain started selling them a few years ago, and they quickly became my all-time favorite quick meal/one-handed snack. I love them so much, I’ve made them in my Instant Pot a few times. It was… a lot of work. And? They didn’t actually taste that great, in my opinion (and also my kids’ opinions).

Eggs are a big hit in our family just about any way you cook them. When in doubt, we always make eggs. I, of course, love eating these egg bites all on my own, but that rarely happens. I’m almost always sharing with someone.
And more than once, we’ve looked up to see it’s time to leave- like RIGHT NOW- for a sports practice, and were able to heat up these Three Bridges Egg Bites super fast for the kids to snack on in the car. Don’t @ me. They are a lot less messy and a lot more filling than crackers, ok?

They are SO GOOD and I’m SO SAD that my Costco has been out the past couple times. They’re my go-to breakfast, and everything else I’ve tried hasn’t been nearly as filling. Plus, I’m not the only one in my house who loves them. I need to try to find them at the other stores if Costco doesn’t get them back soon.
Wow! They must be super popular if Costco can’t keep them in stock! They are seriously such a great, fast meal that I don’t feel guilt about at all.
